Jujube Ginger Tea

Preparation time: 20 minutes
Cook time: 90 minutes
Servings: 4

Ingredients:

  • 4 oz dried jujubes
  • 1 oz peeled and sliced ginger
  • 6 cups water
  • 1 tsp cinnamon powder

Instructions:

  1. Rinse dried jujubes in cold running water to remove any dirt. Optional: Soak jujubes in water for 20 min so they’re easier to cut.
  2. Cut jujubes in half (be careful of seeds) with kitchen scissors or a knife.
  3. Peel ginger and slice into thin pieces.
  4. In a medium pot, add ginger, cinnamon, jujubes, and water. Cover and heat over medium-low heat for 30 minutes. Leave the lid slightly open so the water doesn’t overflow.
  5. Reduce heat to low and simmer for 60 min. Remove from heat.
  6. Pour the mixture through a stainless steel strainer into a large heat-resistant bowl or pot. Mash the jujubes with a ladle or wooden spoon. The pulp should be strained through the strainer.
  7. Pour strained tea into a tea kettle or into cups to serve. Enjoy!
