Baked Korean Sweet Potatoes

Preparation time: 5 minutes
Cook time: 45–60 minutes
Servings: 4

Ingredients:

  • 4 Korean sweet potatoes
  • Pinch of salt

Instructions:

  1. Preheat oven or toaster oven to 400 °F. Wash sweet potatoes and wipe dry with a paper towel. With a fork, poke sweet potatoes 4-5x each to allow venting.
  2. Bake for 45-60 minutes until soft and tender. Use a fork to poke the sweet potato. If there’s no resistance, they should be done
  3. Remove from oven and cool. Serve once cool enough to handle. Peel skin and sprinkle with salt (optional) before consuming.
