Lentil Soup

Cook time: 35 minutes
Total time: 40 minutes
Servings: 2-3

Ingredients:

2 tbsp olive oil
1 onion, diced
2 carrots, peeled and diced
¾ cup green or brown lentils
4 cups low-sodium vegetable broth
¼ tsp thyme
1 bay leaf

Instructions:

  • Heat a large saucepan over medium heat. Sauté onion and carrot until onion is translucent, about 5 minutes.
  • Add remaining ingredients and bring soup to a boil. Lower heat and simmer for about 30 minutes, until lentils are soft. Remove bay leaf and serve.
