Easy Breakfast Burritos

4 tbsp olive oil, divided
1 cup onion
1 red bell pepper, diced
1 can low-sodium black beans, drained and rinsed
4 whole eggs
4 egg whites
¼ cup shredded cheddar cheese
4 whole wheat tortillas (6-8 inches wide)
⅓ cup fat-free plain Greek yogurt
¼ cup mild salsa
1 avocado, diced


  • Heat 2 tbsp olive oil in a large nonstick frying pan over medium heat.
  • Add onions and peppers and sauté until onions are soft and peppers are lightly charred, about 7-8 minutes.
  • Add black beans and cook until warmed, about 3 minutes.
  • Season with salt and pepper and transfer to a plate.
  • In a mixing bowl, whisk the whole eggs and egg whites and add cheese.
  • Heat the remaining 2 tbsp olive oil in the pan over medium-low heat and add egg mixture, scrambling until cooked through, about 3 minutes.
  • In a small bowl, mix Greek yogurt and salsa. Divide yogurt mixture evenly between tortillas and layer with black beans, veggies, eggs and avocado.
  • Roll up burrito style and serve.
