Healthier Chocolate Mousse

6 oz (one box) Mori-Nu silken-firm or extra-firm tofu (the shelf-stable kind in the Asian aisle)
¾ tsp cocoa powder
¾ cup chocolate chips (use stevia-sweetened chips for lower-sugar option; Lily’s brand is one example)
½ tsp pure vanilla extract
1 tbsp milk of choice
Pinch of salt 
3 tsp maple syrup (optional; taste before adding and add one at a time, tasting in between)


  • Melt the chocolate, either on the stove or in the microwave.
  • Add chocolate and remaining ingredients to a Magic Bullet or food processor and blend until smooth.
  • Taste and adjust sweetener accordingly.
  • Serve with fresh berries for a high fiber dessert.
