Mashed Potatoes

Ingredients:

  • 2 pounds Yukon gold potatoes, peeled and diced into cubes
  • ½ cup milk
  • ¼ cup low sodium chicken stock
  • 2 tablespoons butter
  • ½ cup plain Greek yogurt
  • ½ teaspoon garlic powder
  • 1 teaspoon salt (or more to taste)
  • ½ teaspoon pepper (or more to taste)
  • Fresh green onions, chopped, for garnish (optional)

Instructions:

  1. Put potatoes in a large pot with salt and enough water to cover. Bring to a boil.
  2. Cover and reduce heat. Simmer for 15-20 minutes, or until the potatoes are tender. Check with a fork by poking the potatoes.
  3. Strain the potatoes and then transfer them back to the pot.
  4. Add milk, chicken stock, butter, Greek yogurt, garlic powder, salt, and pepper to the pot. Mash the ingredients with a potato masher until smooth (do not over-mash).
  5. Top with green onions (optional).
