Mashed Potatoes

Ingredients:
- 2 pounds Yukon gold potatoes, peeled and diced into cubes
- ½ cup milk
- ¼ cup low sodium chicken stock
- 2 tablespoons butter
- ½ cup plain Greek yogurt
- ½ teaspoon garlic powder
- 1 teaspoon salt (or more to taste)
- ½ teaspoon pepper (or more to taste)
- Fresh green onions, chopped, for garnish (optional)
Instructions:
- Put potatoes in a large pot with salt and enough water to cover. Bring to a boil.
- Cover and reduce heat. Simmer for 15-20 minutes, or until the potatoes are tender. Check with a fork by poking the potatoes.
- Strain the potatoes and then transfer them back to the pot.
- Add milk, chicken stock, butter, Greek yogurt, garlic powder, salt, and pepper to the pot. Mash the ingredients with a potato masher until smooth (do not over-mash).
- Top with green onions (optional).
