Macaroni & Alfredo Sauce with Greek Yogurt

  • 1 lb elbow macaroni
  • 1½ cups whole-milk Greek yogurt
  • ½ cup freshly grated Parmesan cheese, plus more for serving
  • 3 tbsp minced garlic
  • ¼ cup chopped fresh parsley
  • Salt and pepper to taste


  1. Bring 8 cups of salted water to a boil. Add pasta and cook per package instructions. Reserve 1 cup cooking liquid, then drain.
  2. Whisk together yogurt, ½ cup Parmesan, garlic and parsley. Pour sauce over pasta and toss to combine. Slowly whisk in cooking liquid, 1 tbsp at a time, until desired consistency is reached. Add salt and pepper to taste.
  3. Top with more Parmesan to taste and serve immediately.
