Seed Brittle

Ingredients:

  • 1 cup raw pumpkin seeds
  • ¾ cup raw sunflower seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons chia seeds
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon pumpkin spice or ground allspice
  • ½ teaspoon salt
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 325°F. Line a baking sheet with parchment paper.
  2. Combine all seeds, spices, and salt in a large bowl, then add maple syrup and vanilla. Mix until well coated.
  3. Spoon the mixture onto the baking sheet with a rubber spatula. Pat the brittle into an evenly layered 1/8-inch-thick layer.
  4. Bake for 35 minutes or until golden brown. If it is not crispy after it cools, put it back in the oven for another 5–10 minutes.
