Creamy Chicken & Rice Soup

Ingredients:
- 2 cups cooked, shredded chicken
- ½ cup white rice (uncooked)
- 1 small carrot, finely diced (optional)
- 1 small onion, finely diced
- 5 cups chicken broth
- ½ cup heavy cream
- Salt & pepper to taste
Instructions:
- Bring broth to a boil in a pot; add rice and cook 15 minutes.
- Add onion and carrot; simmer 10 minutes until very soft.
- Stir in chicken and cream; heat gently.
- Season with salt and pepper.
