Creamy Chicken & Rice Soup

Ingredients:

  • 2 cups cooked, shredded chicken
  • ½ cup white rice (uncooked)
  • 1 small carrot, finely diced (optional)
  • 1 small onion, finely diced
  • 5 cups chicken broth
  • ½ cup heavy cream
  • Salt & pepper to taste

Instructions:

  1. Bring broth to a boil in a pot; add rice and cook 15 minutes.
  2. Add onion and carrot; simmer 10 minutes until very soft.
  3. Stir in chicken and cream; heat gently.
  4. Season with salt and pepper.
