Simple Potato Pancake

Ingredients:

  • 1 large potato (8 oz), peeled and grated
  • ¼ cup grated onion
  • ¼ tsp kosher salt
  • ¼ cup potato starch
  • ¼ cup vegetable oil or avocado oil or grape seed oil

Dipping Sauce

  • 2 Tbs soy sauce
  • 1 Tbs freshly squeezed lime juice (or lemon or vinegar)
  • 1 green onion, chopped
  • ¼ cup thinly sliced onion
  • ½ tsp sugar
  • 1 jalapeno pepper, chopped (optional)

Instructions:

  1. Dipping sauce: In a small bowl, combine soy sauce, lime juice, green onion, onion, jalapeno pepper and sugar and mix together until the sugar is melted.
  2. Potato Pancakes:  Combine grated potato and onion in a bowl. Add salt, potato starch and mix ingredients together.
  3. Heat a medium nonstick pan over medium high heat. Add 2 tablespoons of cooking oil and swirl around the pan to coat it evenly. Add potato mixture and spread it thinly on pan.
  4. Cook about 2-3 minutes on each side until crispy and light golden brown. Flip pancake over with spatula and add the rest of the oil to the edge of the pancake. Swirl and shake pan so the oil spreads underneath the pancake. Cook for another 2-3 minutes until the bottom turns golden brown.
  5. Turn pancake over again and cook for an additional 2 minutes. Repeat other side. Transfer to plate and serve with dipping sauce
