Slow Roasted Citrus Salmon

Servings: 4-6
Ingredients:
- 1 ½ lb salmon fillet, with skin on
- 2 lemons, thinly sliced
- 1 Tbs fresh lemon juice
- 1 blood orange, thinly sliced (or cara orange)
- 1/3 cup olive oil
- 2 cups herbs (parsley, cilantro, dill, or tarragon, with stems on)
- 1 tsp salt
- 1 tsp black pepper
Optional:
- 6 prigs thyme, rosemary, oregano, or marjoram
Instructions:
- Preheat oven to 300 degrees. Line baking dish with sliced lemons, orange, and sprigs of thyme (or rosemary, oregano, or marjoram)
- Season salmon with salt and pepper on both sides before placing in baking dish
- Drizzle salmon and citrus slices with olive oil before baking for 25 to 35 minutes. Salmon should turn opaque and flaky when separated.
- Toss 2 cups of fresh herbs with 1 tablespoon lemon juice and pinch of salt. Serve with salmon.
