Slow Roasted Citrus Salmon

Cook time: 35 minutes
Total time: 45 minutes
Servings: 4-6

Ingredients:

  • 1 ½ lb salmon fillet, with skin on 
  • 2 lemons, thinly sliced
  • 1 Tbs fresh lemon juice
  • 1 blood orange, thinly sliced (or cara orange)
  • 1/3 cup olive oil
  • 2 cups herbs (parsley, cilantro, dill, or tarragon, with stems on)
  • 1 tsp salt
  • 1 tsp black pepper

 

Optional:

  • 6 prigs thyme, rosemary, oregano, or marjoram 

Instructions:

  1. Preheat oven to 300 degrees. Line baking dish with sliced lemons, orange, and sprigs of thyme (or rosemary, oregano, or marjoram)
  2. Season salmon with salt and pepper on both sides before placing in baking dish
  3. Drizzle salmon and citrus slices with olive oil before baking for 25 to 35 minutes. Salmon should turn opaque and flaky when separated. 
  4. Toss 2 cups of fresh herbs with 1 tablespoon lemon juice and pinch of salt. Serve with salmon.
