Super Cheesy Macaroni & Broccoli

  • 8 oz elbow macaroni (can use regular, gluten free or whole wheat as desired)
  • 3 tbsp butter
  • ¼ cup flour
  • ½ tsp dry mustard
  • ¼ tsp ground black pepper
  • 2½ cups milk of choice
  • 3 cups cheddar cheese, grated
  • 2 cups cooked broccoli (OK to use frozen)


  1. Preheat oven to 375 degrees F.
  2. Cook pasta according to package directions until al dente. Rinse pasta in cold water to stop cooking and set aside.
  3. In a small bowl, mix together flour, salt, pepper and dry mustard.
  4. In a medium sauté pan, melt butter over medium heat.
  5. Remove butter from heat and whisk in flour mixture. Return to heat and cook for 3 minutes, stirring constantly.
  6. Add milk and whisk to a smooth consistency. Continue cooking over medium heat until thickened, about 10 minutes.
  7. Remove from heat and stir in 2 cups of cheese until cheese, until melted.
  8. Stir broccoli into cheesy pasta.
  9. Add half of the pasta mixture to a 2-quart casserole dish. Sprinkle ½ cup of cheese over the top and repeat with remaining pasta and ½ cup of cheese.
  10. Bake for 30 minutes or until the top just starts to brown.
