Turkey Chili

Servings: 6 - 8

Ingredients:

  • 2 Tbsp olive oil or avocado oil
  • 1 large yellow onion, diced
  • 2 red bell peppers, diced
  • 6 garlic cloves, minced
  • 3 lb lean ground turkey or chicken
  • 1 can red kidney beans (15 oz)
  • 1 can black beans (15 oz)
  • 1 can white beans or three-bean blend (15 oz)
  • 1 can tomato sauce (15 oz)
  • 1 can diced tomatoes (15 oz)
  • 1 can green chiles (4 oz)
  • 2 tsp cumin
  • 1 Tbsp chili powder
  • 1 Tbsp paprika
  • 2 cups chicken broth
  • 1 tsp salt
  • 1 can sweet corn

Optional:

  • 1 jalapeño, seeded and diced

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add diced onion, garlic, and red peppers and sauté for 5 minutes.
  2. Add ground turkey and break up the meat. Cook until brown, then add chili powder, paprika, and cumin. Mix in the seasoning for 20 seconds.
  3. Open, rinse, and strain all cans of beans and corn.
  4. Pour in tomatoes, tomato sauce, chicken broth, strained beans, and strained corn. Bring to a boil, then reduce heat and simmer for 30–45 minutes. When the chili thickens, remove from heat.
  5. Serve in bowls and garnish with toppings such as cheese, avocado, tortilla chips, cilantro, or sour cream.
