Eve's CAvE Salad: Cucumber, Avocado & Edamame Salad

Ingredients:

  • 4 Persian cucumbers, sliced
  • 1 avocado, cubed
  • 1 cup edamame, shelled
  • 1 tomato, chopped
  • ¼ cup fresh-squeezed lemon juice
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • A few sprigs of cilantro or parsley, chopped (optional)

Instructions:

  1. Gently mix cucumbers, avocado, edamame, and tomatoes in a bowl.
  2. In a separate cup, whisk lemon juice and olive oil together.
  3. Add salt and pepper to taste.
  4. Pour the lemon juice and olive oil mixture over the salad.
  5. Sprinkle with cilantro or parsley if desired.
