Lentil-Walnut Taco Filling

Ingredients:

  • 2 teaspoons olive oil
  • ½ medium yellow onion, diced
  • 2 large cloves garlic, minced
  • 1 ½ cups cooked green lentils (or 1 (15 oz) can, drained)
  • 1 cup raw walnuts, finely chopped
  • 1 teaspoon cumin powder
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ¼ teaspoon chili powder
  • 2 tablespoons tomato paste
  • ¼ cup vegetable broth 
  • 1 ½ tablespoons tamari or soy sauce
  • ¼ cup chopped fresh cilantro for garnish (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Heat the oil in a large skillet over medium-high heat. Cook the onion and garlic for about 3 minutes, or until fragrant.
  2. Add the lentils and walnuts and cook for 1 minute more. 
  3. Add the spices and tomato paste and cook for 2 minutes, stirring constantly.
  4. Add tamari and vegetable broth. Reduce the heat to low and cook for about 4 minutes, or until the mixture thickens, adding more broth as desired.
  5. Season with salt and pepper. Garnish with chopped cilantro, if using.
