TJ's Coconut Curry

Ingredients:
- 1 block of tofu of choice, cubed into half-inch cubes
- 4 Tablespoons of oil
- 1 red or yellow onion diced
- 2 cloves garlic minced
- 1 cup shelled edamame
- 2 cups diced vegetables of choice (broccoli, carrots, mushrooms, cabbage, celery, brussels sprouts, work well)
- 1 Bottle Red Thai-style curry sauce
- 1 Can coconut cream
- 8 oz water
- Fresh Cilantro rinsed and chopped
- Cooked rice of choice
Instructions:
- In a frying pan, stir fry tofu cubes in two tablespoons oil until golden on each side and put aside
- In a large pot, sauté onions in remaining 2 tablespoons of oil until translucent
- Add garlic to onions and sauté for about 2 minutes
- Add diced vegetables to onions and garlic and sauté for another 5-10 minutes until vegetables are slightly softened
- Add edamame, tofu, curry sauce coconut cream and water and allow ingredients to simmer for about 10 minutes.
- Remove from heat and stir in cilantro
- Serve over rice
