TJ's Coconut Curry

Ingredients:

  • 1 block of tofu of choice, cubed into half-inch cubes  
  • 4 Tablespoons of oil 
  • 1 red or yellow onion diced 
  • 2 cloves garlic minced 
  • 1 cup shelled edamame 
  • 2 cups diced vegetables of choice (broccoli, carrots, mushrooms, cabbage, celery, brussels sprouts, work well) 
  • 1 Bottle Red Thai-style curry sauce 
  • 1 Can coconut cream 
  • 8 oz water 
  • Fresh Cilantro rinsed and chopped 
  • Cooked rice of choice  

Instructions:

  1. In a frying pan, stir fry tofu cubes in two tablespoons oil until golden on each side and put aside 
  1. In a large pot, sauté onions in remaining 2 tablespoons of oil until translucent 
  1. Add garlic to onions and sauté for about 2 minutes 
  1. Add diced vegetables to onions and garlic and sauté for another 5-10 minutes until vegetables are slightly softened 
  1. Add edamame, tofu, curry sauce coconut cream and water and allow ingredients to simmer for about 10 minutes. 
  1. Remove from heat and stir in cilantro 
  1. Serve over rice
